Today, with so much globalization and so much industrialization, the strudel is somehow within everyone's reach and only the convenience pushed to the extreme can prevent you from trying it at least once (or you may not like the idea at all, and then convenience is out of the question). There are quite well-made strudel sheets to buy today, without margarine, without additives, you only have to read three-five-seven labels in the store until you discover the safest of them. Once you've done that, go to the fruit stand or, better yet, to the market, and buy a pound of juicy and fragrant apples.

Allow the sheets to thaw and wash the apples well.

Remove the pips from the apples, with their alveoli and then cut the apples into cubes.

Put the apples in a non-stick pan over low heat. Along with them, a teaspoon of ground cinnamon, two tablespoons of brown sugar and a few mint leaves, even dried. After ten minutes, take the apples off the heat, let them cool a bit and then pour them over the spread dough.

Roll the dough carefully and roll.

If you keep three overlapping sheets it will be enough (the dough comes in many-many & # 8211 about 15-sheets). Sprinkle a little cinnamon and a little finely ground brown sugar over the sheets.

Method of preparation:

We spread the two sheets of puff pastry, so that they have a size of 30 & # 21540 cm. Place one of the pieces of dough in a tray lined with baking paper.

We use a baking tray smaller than the dough sheet, because it must also cover the sides.

Place a layer of biscuits over the puff pastry. Sprinkle 3 tablespoons of sugar and lemon juice on top.

We clean the apples, remove the stalks and grate them. Mix the grated apples with the cinnamon sugar and put them over the biscuits.

Mix the pudding powder with 300 ml of milk. Boil the remaining milk with 6 tablespoons of sugar. When it boils, add the pudding and mix. We cook a thick pudding, which we pour immediately over the apple layer.

Cover with the other sheet of dough. Prick the dough from place to place with a fork. Grease the cake with beaten eggs.

Put the tray in the preheated oven at 200 degrees for 30-35 minutes. Let the cake cool, then sprinkle with powdered sugar. We cut the cake into slices, after which we can cut it and serve it. Good appetite and increase cooking!

  • 1.4-1.5 kg. apples suitable for pie (a sour variety and, ideally, with a stronger pulp)
  • 150 grams of sugar
  • 80 grams of flour (up to 120 grams if you use a very juicy apple variety)
  • 1 tablespoon cinnamon
  • juice of 1/2 lemon
  • 130 ml. sunflower oil (I used 1/2 melted butter, 1/2 oil but it works just as well and only with oil, for a vegan version)
  • vanilla powdered sugar for finishing the pie

Preparation of apple pie with purchased leaves:

1. Choose a variety of stronger and sour apples. Ideal for pie are granny smith apples or the Romanian variety "Florina". They have a thicker pulp and do not contain as much water. The pie can also be made with the ionatan or idared variety.

2. Remove the pie sheets from the package after thawing. Of course, if they weren't fresh. It is ideal to thaw overnight in the refrigerator. Place them, well stretched, between two lightly damp kitchen towels to avoid drying them. Slightly moistened means even very slightly moistened, sprinkled with a little water, not wet.


3. Peel the apples and grate them on a grater with large holes. Sprinkle immediately with lemon juice and mix to avoid oxidation as much as possible. From the amount of 1.5 kg apples should result about 1.2-1.3 kg. grated apples.

4. Switch on the oven and set it at 200 ° C. Using a special pastry brush, grease a tray well on the bottom and side walls. I used a tray measuring 40 & # 21525 cm. In the greased tray, place half of the pie sheets in turn, greasing each one well with the brush soaked in oil. Or with the mixture of melted butter and oil, as you prefer. My package contained 12 sheets, so I based six overlapping sheets. I greased each one on the whole surface. The edges of the sheets rise up on the walls of the tray.

5. Add sugar, cinnamon powder and flour to the grated apples, just before you need them to fill the pie. If you used a variety of apple that leaves a lot of juice, supplement the amount of flour with something, as we specified in the list of ingredients. Mix well and pour over the prepared sheets in the pan.

6. Level the apple filling well on the entire surface, then pull the edges of the sheets inwards.

7. Cover the filling with the rest of the sheets, which we will overlap in the same way as the first ones, greasing well on the whole surface of each added sheet. Finally, the edges of the sheets at the top will be inserted under the pie, as we showed in the recipe for cheese and pumpkin pie.

8. Grease the last sheet well with the remaining oil. Using a sharp knife, slice the pie as desired: squares, rectangles, rhombuses. It is important to use a knife that cuts well and to cut sensibly, so as not to disturb the soft filling and the sheets arranged on top.

9. Bake the pie in the preheated oven at 200 ° C. After 15 minutes, reduce the temperature to 180 ° C and continue baking for another 30-35 minutes (45 & # 8211 50 minutes in total), until the pie is nicely browned.

10. Finally, the hardest test awaits us, that of letting the pie cool in the tray in which it was baked, until the kitchen temperature. This is almost impossible, given how nice it smells. If you want the sheets on the surface not to be so crunchy, you can cover the tray with the pie, while it is hot, with 2-3 kitchen towels. Thus, it will sweat and the sheets will soften.

11. Before serving, cut the pie, following the lines already drawn with the knife before putting it in the oven. It is then powdered with vanilla powdered sugar and then tasted with delight.


There are two different tart recipes, a classic tart & icircn in which the apples are placed on top of the dough, on a bed of quince jam, and the second tart with apples is an inverted tart, with coarsely sliced ​​apples and a sugar syrup. with butter that will deliciously glaze the tart after overturning.

How to prepare apple pie on top.

Unwrap the puff pastry and cut into 7-8 cm wide slices. Grow with a sharp knife to cut a groove around the dough, leaving a 5-6 mm edge on the outside, but be careful not to pierce the dough completely. This groove is interesting because it will delimit the edges of the tart, and the dough will grow more on the edge.

Glaze the dough with quince jam leaving the simple delimited edges.

The apples are peeled and stalks, sliced ​​thinly, and the slices are placed nicely over the quince jam, lightly passed, like a fan.

Sprinkle with lemon & acircie juice, sprinkle with sugar and cinnamon and place small cubes of butter in place, which will melt and glaze the apples nicely.

Bake the apple pies at 180 degrees for 30-35 minutes.

Preparation of yogurt cream for apple pie.

To serve these apple tarts in the most delicious way, mix mascarpone with vanilla and yogurt-flavored sugar. Decorate the hot apple pie with this yogurt cream. The cream will melt slightly and will glaze the tart nicely. Sprinkle a few mint leaves on top, for a taste and freshness.

Preparation for the overturned apple pie

For this tart, the apples are cleaned only of the stalks and sliced ​​coarser, & icircn 6 or 8 slices, according to the size of the apples.

As before, the tart will be served hot, glazed with a cream prepared by mixing sm & acircnt & acircnii with mascarpone and powdered sugar. Put equal amounts of mascarpone and fermented sour cream, and powdered sugar will be added to taste.

Apple tart and quince jam served with yogurt cream

There are two apple pie recipes quite simple to prepare, without the need for fixed amounts that give us headaches.


First, peel the apples, then put them on the grater with large holes, sprinkle with 8 tablespoons of sugar and a tablespoon of cinnamon, then set aside.

The puff pastry sheet is cut in half. Spread half a sheet of puff pastry as long as the tray (to be very thin). Place the biscuits next to each other on the sheet, so that there is no free space on the puff pastry sheet. Grated apples are spread over the biscuits (along with the juice left by the apples, it enters the biscuits completely). The two packets of vanilla pudding are boiled with 16 tablespoons of sugar in a liter of milk, boiling until thickened. So hot pour over grated apples and spread in the pan. The other half of the puff pastry sheet is also spread very thin and placed over the pudding. Break the egg and grease the top sheet.

Prick the puff pastry sheet from place to place with a fork or toothpick to get the steam out during baking. Place the tray in the preheated oven at 180 degrees for about 30-40 minutes.

A sheet is obtained with the thick middle and thinner edges in which the butter is wrapped and the dough is first rolled. A rectangular sheet is obtained which is folded into 4. Leave to cool to + 4 ° C for about 20 minutes. This operation of rolling, folding and cooling is repeated 3 more times, so that in the end the dough is rolled, cooled and folded 4 times in four, obtaining the puff pastry.

Preparation of the filling

Apples are mixed with sugar, 150 g. Breadcrumbs and cinnamon or vanilla.
