The tortellini are so beautifully twisted that I also like them in soup. For this recipe I was inspired by here: http://www.alaskafromscratch.com/2011/12/07/tortellini-soup/. A nutritious soup and very easy to prepare.

  • 500 g tortellini stuffed with ham
  • 3 tablespoons olive oil
  • 5 cloves chopped garlic
  • 2 chopped green onions
  • 300 g raw-dried pork muscle - cut into cubes
  • 3 dogs baby-spinach leaves
  • 100 g mashed tomatoes [own preserve]
  • 2 l clear beef bone soup
  • pepper
  • salt
  • parmesan - optional

Servings: 4

Preparation time: less than 60 minutes

RECIPE PREPARATION Tortellini soup:


  1. Fry the onion and garlic in oil in a large pot.

  2. When they become glassy, ​​add the pork muscle cubes.

  3. Fry together for 2-3 minutes and pour over the clear beef bone broth and mashed tomatoes.

  4. When the soup boils, boil the tortellini.

  5. Do not exceed the indicated cooking time. If the tortellini boil too much they break and lose their beautiful shape.

  6. At the end add the young spinach leaves.

  7. Pepper and taste. Salt only if needed.

  8. If you want to serve, you can add grated Parmesan cheese. I did not put I liked the taste without.

Another similar legend appeared in medieval Italy and has mythological characters as protagonists. According to legend, the goddess Venus and the god Jupiter arrived in Bologna one night and shot at an inn. The sequel is almost identical to the previous legend, and the navel of the goddess Venus is considered to be the source of inspiration.

It can be seen that the two legends indicate different places where the tortellin was invented.

Tortellini in soup. According to the Bolognese tradition, they are cooked and eaten with clapon or chicken meat soup.
